– Baked Cheese And Spinach (Slk Fel Kousha) adapted from The Great Book of Couscous by Copeland Marks

Ingredients
2 Pounds Spinach — chopped
3 Tablespoons Olive Oil
1 Medium Onion — finely chopped
1/2 Pound Ground Beef
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
1/2 Cup Water
2 Ounces Gruyere Cheese — grated
2 Tablespoons Parsley — finely chopped
Directions Cook spinach in small amount of water for 3 minutes. Drain and press out excess liquid. Heat oil in pan, add onion and meat. Stir fry , adding salt and pepper for 3 minutes. Add water and spinach and cook for 5 minutes. Put mixture in baking dish and sprinkle with grated cheese. Bake in 350 degree oven for 10 minutes.
Serves 6
